To commemorate Mardi Gras this year, Silver Cow will be serving this Saturday and on Tuesday (March 1 & March 4): $3 Abita Jockamo IPA’s, Turbodog’s and Dixie Blackened Voodoo Beer PLUS Crawfish Etouffee – this is the same recipe of mine which is featured in Intuition Ale Works cookbook, “Cooking with Intuition” and Chicken & Sausage Gumbo – also, an old family recipe!

That sound you hear is the “Spirit of Ruminations Yet to Come” … Silver Cow is excited to have Creative Culinary Conjurer, “The Quinn” join our staff. He’s got some great ideas which will be distinctive additions to the menu items I had planned.
Some initial Items will include Black Bean & Corn Chili, Grilled Portobello Sandwiches, Beer Brats and Kraut, Roast Pork Sliders and Chipotle Cucumber and Watermelon Soup – just to start.

ARM – A – DEAL-OH! K-SO! To commemorate THE BIG GAME, we have one batch of Armadillo Queso which will be served with a pile of chips today. First come, first served – limited quantity.
Melted cheese with diced milder green chili peppers, onions, diced tomatoes, spiced hamburger meat, spiced sausage and chili powder. A little spark but not overpowering heated spice.
Are you wondering where the Armadillo is? … come on, we’d never serve Armadillo meat at Silver Cow – not without mole sauce, that is. That would be so gauche! Recently tapped Bells Double Cream Stout, Jolly Pumpkin’s Oro de Calabaza, Fulls Sail’s Pale Bock, Unibroue’s Trois Pistoles and the oldest brewery in the world (1040 AD) Weihenstephaner Hefeweissbier.

We WILL be open tomorrow at 3 pm. Our Ruminations special will be: Olde School Beef Pot Roast prepared with rosemary, garlic and Dogfish Head’s Olde School Barleywine topped with Italian parsley served with polenta and roasted carrots – $9.95
Pairs well with Franziskaner Hefe-Weisse Dunkel, St. Bernardus ABT 12 or of course Dogfish Head’s Olde School Barleywine! You’ll find it also goes well with a glass of Bench Pinot Noir Russian River 2012.
