Brewer’s Notes:
Pushing the envelope on what Belgian beer can be, the common and traditional taste of the farmhouse rarely pushes double-digits in alcohol content, but Struis’ “imperialized” saison does just that- taking a dry, drinkable and refreshing taste and turning it into a sipper.

Deep with burnt orange and goldenrod hues, the beer’s eruptive carbonation soon builds a creamy meringue while its body churns with champagne turbulence. Each pop of the bottle unleashes a peppery and fruit-laden perfume- over-ripened citrus, tropical and orchard fruit lead the way with a spicy tinge to tickle the nose. Its initial taste is lightly candied but sweet and bready with biscuit and pound cake.

Though the ale carries a hearty level of sweetness onto the middle palate, its effervescence bounces off the tongue and lightens the beer’s body and taste. Fruit-forward flavors stem from the sweetness with slightly bruised orange and peach while light apricot and marmalade play softly behind. Lemon, apple, white grape and fig weave into a vinous wine-like taste. Its spicy balance seems of peppercorn, clove, white pepper and a fleeting drift of nutmeg before the spicy alcohol sings a warm chardonnay tone.Aestatis Farmhouse Saison - De Struise Brouwers 2

The beer’s medium body probably carries a greater heaft than it seems on the mouth, but the strong bubbly action keeps the session lighter and more playful, but with a stern carbonic bite that suggests a mineral and acidic taste and texture. Its peppery finish hinges on hot and prickling as the alcohol gives the phenolic side of the beer the edge in aftertaste.

“This is %*&@# great! Is it really made with dandelions?” — A typical consumer.

Dany, the offbeat brewer at Fantôme, will try anything, and the results are always interesting. A beer made from dandelions would be worth a try if only because no one has ever brewed one before, but the great news is that this is actually a very good beer.
Dany and some cohorts get busy every spring picking bushels of dandelions that grow in the fields around the picturesque farmhouse brewery. The yellow flowers are removed and dried in the sun, then soaked in water for a few days. The thick, dark dandelion “tea” that results is the basis for the Pissenlit, which is made also from traditional barley malt and hops. It resembles a classic saison beer – golden spritzy brew, strong and very flavorful, with a good hop bite. You may have to strain to taste the dandelions, but you know they’re in there.
“Pissenlit” is the French word for dandelion. Literally, it means “pee in bed,” which we guess describes the physical effect the flower has on French-speaking persons. We are happy to report, however, that we haven’t had any problems with incontinence after downing a bottle of this beer.

The Dark Woods Series is a spooky exploration into the world of wood-aged beer. Last year’s version was an Imperial Porter aged on French Oak, White Oak and Maple.
This year’s version is a continuation of the popular series. Cigar City Brewing used a combination of four different toast levels of White Oak on this beer. The base beer is a dark old ale that is inspired by the end of the harvest and the beginning of Winter days to come.
The story behind the name of this beer has been debated for may years. Their Brewmaster Wayme Wambles explains it like this:
In the late 1800s, a traveler was making his way to Tampa. It was getting dark and he decided to take a shortcut through the woods in order to reach his hotel in the city before nightfall. As the sun set, he found himself in the middle of the dark woods. He camped for the evening and made a fire.
As he settled in, he noticed a light approaching from the depths of the forest. He took shelter to avoid being seen by potential thieves. A dark figure emerged from the woods carrying a large black cauldron and a heavy burlap sack. The figure placed the cauldron over the fire and added strange substances to the pot. Soon, an enticing chocolate aroma permeated the campsite and the hiding traveler became more intrigued but was still afraid to be seen.
Suddenly, the figure reached into the burlap sack and tossed mysterious pinecone-shaped vegetation into the cauldron, which began to froth excitedly, emitting aromas of molasses and blackberry. The figure leaned over the kettle and inhaled deeply, enjoying the boiling concoction. Finally, he raised his hands and uttered an other-wordly incantation in a disconnected language that the man could not identify.
Tree limbs levitated from the dark woods and into the pot, stirring and infusing with the dark liquid inside. Suddenly there was a brilliant flash of light and the traveler lost consciousness. He awoke as the sun was rising across the sky and small beams of light permeated the forest.
The dark figure was gone and all that was left was a strange urn resting by the campsite. The writing on the urn proclaimed, “THE DARK WOODS.”
